Excel for mac 2010 user guide change theme

I can't change the theme in Excel. I have the Office Subscription for Mac. I click on the "Page Layout" tab, click on "Theme", and then click the theme I want. Nothing changes. Is there another step?

Those are then available in each of the other programs but cannot be set as a default Theme. In order to use any Theme as a 'default' you'd need to create a template with that Theme applied, then generate new documents from the template.
